This quick easy first step uses just a smidge of the flour blend to kickstart dough development, draw out complex flavors and help the dough rise. It’s best done at night before bed. Mix the pre-ferment as follows:
50 g Unified Mills Buckwheat Baguette Flour Blend
50 g room temperature water
15 g sourdough starter or non-Greek yogurt (If yogurt, you will add yeast in the “Mix the Dough” step.)
Loosely cover with a damp kitchen towel and leave in warm place for 12 hours. A turned-off oven with only the oven light on works great
